PGL Rumbug is a 350-bed Residential Outdoor Activity Centre located in the majestic South Gippsland hills overlooking Wilson’s Promontory in Foster North.

We are seeking a passionate “foodie” to lead the catering department as the Catering Manager.

This hands-on role will see you manage a small friendly team, delivering quality dining experiences in a friendly and fast paced environment by providing tasty, nutritious meals and excellent customer service.

Reporting to the Centre Manager you will take responsibility to ensure that catering provisions are consistently in line with PGL standards and safety procedures, meeting agreed financial targets as well as the ongoing training and support of the catering team.

Key responsibilities include:

  • Live PGL’s vision and values every day.
  • Direct line management of cooks & catering assistants;
  • Implementing and effectively monitoring the organisational, local, state, and national food safety systems;
  • Ensuring the presentation of the dining facility is maintained to a professional standard;
  • Maintaining a safe and hygienic environment for guests and staff;
  • Managing stock levels to ensure optimum profitability to the business;
  • Maintaining and improving year-on-year feedback scores;
  • Good comprehension and proactive management of food allergies and dietary requirements;
  • Purchasing and authorising catering related costs in line with strict budget expenditure targets, using a range of suppliers;
  • Delivering department specific training, including Food Safety, COSHH and Manual Handling;
  • Managing and motivating the catering department and ensuring development of key staff to ensure effective succession planning

Qualifications/Experience:

  • Qualifications in food preparation / hospitality operations highly regarded
  • Food Safety Supervisors certificate
  • Provide First Aid
  • Previous experience in a cooking environment and managing a team is required
  • Working with Children’s (WWC) check is mandatory due to the working environment.

This position is a full-time position commencing 4th January 2021.
